We are one month away from the official start of Autumn, but we have been seeing fall decor in all the stores since the 4th of July! Take a stroll through your local Hobby Lobby, and you might even spot a Christmas tree! I am never one to rush the seasons away, but this summer’s heat and humidity has been extremely tough…causing me to look forward to that slight “nip in the air”. Since the last few days have brought rain to our Appalachian foothills, it was perfect for a little autumn dreaming…reading my new magazines full of recipes and pinning to my Pinterest Board Foodie Presentations! I love reading recipes and all of the the tastes of autumn…with the star of so many dishes (both sweet and savory) being pumpkin!
Although I plan to savor every last minute of summer, I am sharing some tasty recipes with you today…recipes that I would say are perfectly pumpkin!

My first time to eat risotto was in Florence, Italy and I have loved it ever since and make it often. During the fall season, I sometimes will add butternut squash, so I know pumpkin will be just as delicious.
Pumpkin Cornbread with Cinnamon Honey Butter
This will be added to my recipe file for sure, with its warm autumn spices. You can’t be from the Deep South and not love cornbread, and this looks amazing. I can imagine this served with collard greens and roasted pork!
I am a big fan of sweet potato fries, so these will be, without a doubt, just as good!
My Mother was the “Queen of cobblers”. My favorite was her sweet potato…I know she would have tried this one for sure!
Pumpkin Gnocchi With Sage Brown Butter
I really like gnocchi and when our favorite Italian restaurant, Bottega, has it on the menu, I will always order it. I have never tried my hand at making it, but why not?
This recipe had me at Nutella…it is so good straight from the jar! Since I am passionate about desserts and Nutella, this will be tried before autumn rolls around!
Roast Pumpkin with Feta and Honey
Roasting brings out the sweet flavors of vegetables, and feta with honey is a winner for sure! I think this would also be good to substitute the feta with freshly grated Parmesan.
My daughter-in-love makes excellent cinnamon rolls. I think I am going to suggest she make these.
I love to serve soups in fall and winter…this is an easy and classic recipe!
Since I am crazy for Italian food, I also love their desserts. This Italian dessert is filled with sweet pumpkin ricotta filling…that has my taste buds dancing! Oddly enough, the best cannoli I ever had was an Italian restaurant in Calgary, Alberta!
Roasted pumpkin, caramelized onions, and Gorgonzola, all baked in a flaky phyllo crust will be perfect for an autumn brunch!
Pumpkin French Toast Casserole
Do you love French toast? If you want a quick to assemble overnight autumn breakfast casserole, this is it…just bake the next morning.
Creamy Pumpkin Spaghetti with Garlic Kale
Pasta with pumpkin, it is a win-win!
