Hello sweet readers! We have enjoyed our first full week of spring and it is truly bursting out all over our Appalachian Foothills! The redbuds are blooming and I believe they are more beautiful than I ever remember. Our snowballs are in bloom and the garden is awakening from its winter sleep. Spring always brings warmer temps and bright beautiful colors as well as changes to our tables…both food and decor! I revised and updated a post from a couple of years ago, so let’s bring spring to the table!
Strawberries fresh from the vine are spring’s best fruit!
Fresh strawberries with a sprig of mint are a delicious addition to orange juice!
Strawberry cake is a springtime favorite! An arrangement of hydrangeas and roses complete the setting!

Strawberry cobbler is a must for our spring Sunday lunches!
Springtime and lemons go together in my opinion. My Mother’s Lemon Cheesecake recipe is my all-time favorite!
If you like shortbread, you will love these Lemon Rosemary Shortbread Cookies!

Spring not only says lemon, but I also think of fresh egg dishes. My recipe for deviled eggs is basic because that is what the family likes, but I do add crumbled bacon…I think it adds flavor to any dish!
A foodie’s dream is this Duck Egg Ravioli with fresh ricotta and black truffles…amazing!
When Butch and I are traveling, we enjoy eating brunch. If Eggs Benedict are on the menu, I will always order them. These were absolute perfection at a little French bistro in Seattle last summer!

Green peas sometime get a bad rap, but when they are fresh in the springtime, I love the flavor they add. Agnolotti with crawfish, Vidalia onions, and sweet peas was a delicious entree at Bottega!
An appetizer of Richard Olney scrambled farm eggs with croutons and asparagus is springtime on a plate!
A favorite dish that I prepare is bacon-wrapped roasted asparagus with a poached egg on top…delicious!

Pam, The cheesecake looks delicious as does the strawberry cake. Our “go to” Spring dessert is a homemade glazed Strawberry pie like Shoney’s used to sell. We’ve had one already but when the southern strawberries come in they taste so much better because the berries are so fresh! All the dishes look so appetizing. The pitcher of orange juice looks tasty; we must try this (and the pitcher is so pretty too!). The arrangement with the carrots is so cute & would be perfect for Easter.
