Happy Thursday sweet friends! It has been a perfectly gorgeous spring week in our Appalachian Foothills. I hope your weather has been nice and spring-like. Our weatherman says it could reach the 90’s next week, that is July weather in May!
I am happy to share a recipe with you today, something I would like to do more often. I love desserts and have never met one that I didn’t lIke. If you love pound cake, this is my favorite! You will find the printable recipe at the bottom of this post.
It is my beloved Mother’s recipe and it is delicious! It is the perfect melding of butter, cream cheese, sugar, flour, and eggs! She was an awesome cook and baker and was known for her cakes, pies, cookies, and cobblers. Her red velvet cake was legendary for bringing big dollars at an annual benefit auction, once fetching $1000.00!
It is strawberry season! A local farm allows you to pick your own, or they will pick for you! Sun-warmed strawberries straight from the field are one of life’s sweet and simple pleasures.
Pound cake and fresh strawberries go together like peanut butter and jelly!
This is my version of strawberry shortcake…
…it is most often like a sweet biscuit or sponge cake. The first recipe for strawberry shortcake appeared in an English cookbook as early as 1588. I have used different shortcake recipes, but I much prefer my Mother’s pound cake recipe!
Macerated strawberries, fresh whipped cream, and a sprig of chocolate mint complete this favorite dessert!
This pound cake is perfectly paired with fresh berries or peaches. I also love a smear of Nutella on a slice. It is so delicious, that my favorite way to enjoy is just plain. Yes, I also love it for breakfast with my coffee!
This might be a familiar recipe to you, but love was always my Mother’s secret ingredient. She was a stickler for only the best and freshest ingredients!

- 3 sticks unsalted butter, softened (Mother used Land O Lakes’)
- 3 cups sugar
- 1 8-ounce package cream cheese, softened
- 6 egg yolks
- 3 cups flour ( Mother only used White Lily)
- 1/4 teaspoon soda
- 1 teaspoon good vanilla extract (Nielsen-Massey)
- 6 egg whites, beaten until stiff peaks
- Cream butter, sugar and cream cheese preferably in a stand-mixer. Add egg yolks, one at a time, beating after each addition. Add flour, soda, and vanilla and mix well. Fold in beaten egg whites. Pour into well-greased bundt pan. Bake in a pre-heated 300 degree oven for 1 1/2 hours or until done. Cool on wire rack. Slice and serve with fresh strawberries (or peaches)and whipped cream.

Pound cake is my sisters specially and your mothers cake with cream cheese is the same or mostly the same as her recipe. Also the china you are serving it on is the same pattern she has. I will be traveling to NC today to celebrate her birthday and my daughters birthday. Hers is the 8th of May and my daughters is the 10th of May. She named my daughter and I named her daughter. My favorite way to serve Pound Cake is to grill it. I butter each side of the cake (Land of Lakes, of course, tip of my hat to your sweet Mom) and grill it in my iron skillet with grill marks. Both sides and then promptly serve it with fruit and whipped cream (homemade is best but Cool Whip or Reddi Whip is ok too). My husband is partial to this but we have used ice cream instead of whipped cream with fruit. If no fruit, I have been known to use jelly on my cake slice with ice cream. Not bad at all!!! Quick and easy dessert!! The cake caramelizes into something heavenly to eat. Warm cake!!! Winner, winner, chicken dinner!!

Pam, your moms recipe sounds delicious. I plan to make it this week especially since we are getting in such wonderful strawberries and my husband picked up some early GA peaches at our Farmers Market stand on Sat. My favorite peaches are those Chilton county peaches which I bet you are able to get but probably not quite yet. Don’t they usually come in around early June? I do have a question about the cake, do you sift the flour and the other dry ingredients?
