Frank Stitt, A Culinary Genius

I’m sure that I’m not the only one who loves a good food experience.  The perfect ambiance, freshest ingredients, beautiful food presentation, and good conversation all come together to turn what would otherwise be mundane into something marvelous! Being the foodie that I am, some of my best and most vivid memories center around food!  Many are from childhood, and others stretch across the oceans!  My love for food began right here in the Appalachain foothills…

I am a Southern girl through and through, and I’ll bet my bottom dollar that the food that my Mother prepared was the best around!  We always had farm-to-table vegetables in summer…crispy fried okra, pink-eye peas, vine-ripened sliced tomatoes, along with perfectly prepared meats…pan-fried chicken, slow-cooked pot roast, and meat loaf that exploded with flavor!  Of course, bread rounded out the meal…the lightest, fluffiest biscuits this side of the Mississippi and rustic cornbread baked in a seasoned iron skillet.  Let’s not forget the tastiest desserts that melted in your mouth like fresh peach cobbler and tart lemon ice box pie! And being the good southerners that we are, we topped all of this with a glass of sweet iced tea…is your mouth watering yet?

Since Butch and I started traveling, I have had the opportunity to eat the creamiest gelato in San Gimignano, pampas raised beef in Buenos Aries, and vegetable layered moussaka in Crete, to name a few. So why am I telling you all of this?  To introduce you to my culinary hero, Frank Stitt. Who is Frank Stitt?  I’m glad you asked!!  Chef Stitt is the genius who put Birmingham, Alabama on the culinary map when he opened Highlands Bar and Grill in 1982!  But his history goes beyond Birmingham… Stitt’s culinary journey took him from Cullman, Alabama to San Francisco to Provence and back to Sweet Home Alabama!  Even with his classical French training, he has never left his deep southern roots.  This signature appetizer at Highlands is simple southern with a little finesse.  The baked grits epitomizes the humble southern ingredients, jazzed up with a buttery parmesan sauce garnished with wild mushrooms and country ham.  Pure comfort food!

 Highlands companion restaurant is Chez Fonfon, a French bistro serving the best hamburger in Alabama!  On this particular day, I chose this crawfish tartine as my appetizer!  The fresh flavors were a pure symphony!  According to Chef Stitt, “We serve a daily changing menu informed by classic French technique, incorporating the foods of our Southern region.” The menus change by the day or the week, not the season, to reflect the freshest foods available”  Bottega Restaurant and Cafe were opened in 1988 in an elegant and historic Palladian-style building.  Chef Stitt’s love affair with Italian food could now be showcased in the Deep South!  The slightly dressy main dining room is balanced by the adjacent and slightly raucous cafe!  In celebration of Valentine’s my appetizer in Bottega’s dining room was music on a plate…duck egg ravioli with fresh ricotta and black truffles!

Is there any food more indicative of summer in the south than fried green tomatoes?  I was totally captivated by this summer goodness on a plate one afternoon while enjoying the festive Italian ambiance of Bottega Cafe with its Pompeii red walls, huge brick wood-fired oven, and communal table!!
 What a gorgeous plate that says “bring on spring”…scallops alla plancha with sugar snap peas, haricot verts, prosciutto, and mint beautifully presented in Bottega’s dining room!
 Highlands Bar and Grill has once again been named a finalist  for the James Beard Award For Outstanding Restaurant! This makes its seventh time to be nominated as Outstanding Restaurant in the United States. The other 4 finalists this year are all NYC restaurants. With the fabulous food served in all of Chef Stitt’s restaurants, it is not hard to understand his national recognition by the Beard Foundation and major publications like Southern Living, Garden and Gun, Esquire, and Gourmet!  All you have to do is sit down to one of his delectable dishes like Poulet Rouge-two ways with potato purée, carrots, chanterelles, and sauce fois gras!  Immediately you sense the greatness of melding Provence and the Deep South on a plate!Everyone knows that the highly sought after crab cakes can be enjoyed at Chez Fonfon on Thursdays!  Recently for early dinner, I savored every bite of this “combo of fresh jumbo lump and crab claw meat mixed with melted butter, bound with eggs, and flavored with lots of lemon, parsley, shallots, nutmeg, and cayenne.  Another key element is perfect bread crumbs.  A French baguette, one to two days old, make perfect crumbs with ideal texture!” – Frank Stitt

Desserts are the grand finale to a Chef Stitt meal!  A tall bed of torched meringue tops a lemon tart served in a bright red strawberry coulis… a perfect blend of sweet and tart! When you want a “showstopper”, this dessert is a sure bet-a seven layer tower of moist coconut cake with a fluffy icing!!  This is the cake that we will drive sixty miles to Birmingham just to satisfy a craving.  Always on the menu at Chez Fonfon and highly recommended by me! What’s not to love about anything chocolate?  Bottega’s menu described this as-Chocolate Pave…sponge cake with chocolate caramel buttercream and blood orange sorbetto and I didn’t leave a crumb!Butch and I were given a gift card to Bottega for our anniversary.  Chef Stitt included this warm wish in the card!  Without fail, he and his lovely wife Pardis, are gracious hosts that make you feel very welcome, and extremely important, and they are sincerely glad that you have come!  Recently while Butch and I were dining at Bottega, after I returned from the ladies room, my chair was pulled out for me, which is a common practice for their polished and polite staff!  When I looked up to offer thanks, it was none other than Frank Stitt…a true Southern gentleman!
 I highly recommend Frank Stitt’s two cookbooks-Southern Table and Bottega Favorita!  The famous 7 layer coconut cake is included in the first one.  Pictured above is my version of his cake.  For Katy’s birthday I wanted to make the cake for her because she absolutely loves it!  It was a huge success and you can see more here:  Let’s Party!  Maybe I will share the recipe in the future!
77917_420453111337959_936596081_o Frank Stitt was inducted into the James Beard Foundation’s Who’s Who of Food and Beverage in 2011.  He was also named the “Best Chef in the Southeast in 2001.  The James Beard award ceremony is Monday, May 4 in Chicago.  I have eaten at great restaurants in New York City, San Francisco, and New Orleans, but no one has even come close to Frank Stitt!  I consider myself a pretty good judge of food…and hopefully, on Monday, those who make the decision will agree!Collage

Sharing Tablescape Tuesday each week has been a source of creativity and fun.  Since I retired as an interior decorator, this has been a great outlet  to keep my ideas fresh and stay true to my love of color!  You, my sweet and devoted readers, have been more than gracious and kind with your comments.  I am so thrilled that it has brought joy and encouragement into your everyday living!  The main purpose of our blog has always been to honor Christ and share the good news of the gospel.  We always pray that God would use it for His eternal purposes!  My heart is full and I just wanted to share!  Hope you enjoy my vibrant tablescape! A table full of color! When shopping for groceries, I always check out the floral department…the daisies became the inspiration for this fun table!  They make me smile with their happy faces! I love when a tablescape comes together in a few minutes. Sometimes it just clicks! The bright coral napkins add a pop of color paired with the rustic iron dragonfly napkin rings! The tablescape colors played beautifully against the dining room’s red walls! Place setting (dinner plate, stemware, and flatware) is often used!  But adding a new placemat and napkin gives it a fresh look! On a recent shopping trip to Birmingham, I discovered these beautiful placemats! Don’t judge…they are paper!!!  The little rusty iron insects add whimsy! The terrarium is showing off daisy blooms and mint from my little herb garden! I have so enjoyed these little vases.  I have a total of 8, but only used 6. Coral and aqua is a great combination!  Be brave – play with color! The mint in the vases added a hint of fragrance to the table!The paper placemats came on a pad of 50.  I like them so much that I might have some laminated!  fullsizerender-19 Every vase uniquely different!The details:

Take Your Pick!

I always look forward to late April and May for one of my favorites-fresh strawberries!  All of the rain that we had in April made for great conditions for the juicy, sweet berries.  Last week, Katy and I headed over to Norris Farms to pick our own!  There was a pleasant breeze and the day was perfect for filling our baskets to the brim!  Grab your straw hat and join us in the strawberry patch…there might be some tasty treats after we finish picking!
You can pick your own or they will pick for you!
When you realize the sweet reward…the work is fun!
You have to test for sweetness before you do all that work!
They were berry good!  Well-kept vines make for juicy berries!Norris Farms has abundant strawberries, in spite of all the rain!Katy and I picked 2 gallons quickly and then I bought a gallon already picked!Ready for a gentle washing!Our local gourmet popsicle shop makes a fresh and fabulous strawberry pop!  Wish you could just taste the flavor!An easy and delicious way to enjoy fresh strawberries…you can make this little snack in 5 minutes!  If time permits, make your own shortbread.  But a  delicious alternative is Walkers Shortbread petticoat tails (TJ Maxx usually keeps these).  Then, add one of the greatest gifts from Italy, Nutella, and top with a fresh strawberry.  Could it get any easier-and it is so good!I made strawberry cobbler from my Mother’s recipe and it is perfect with or without ice cream!A great appetizer…a bite-sized salad!  I used the original Wheat Thins with a baby spinach leaf on top, but you could use any cracker of your choice.  A slice of strawberry is placed on top of the spinach and drizzled with poppyseed dressing.  Strawberry salads are not complete without candied pecans. Needless to say, I ate way too many! My take on strawberry shortcake…Mother’s pound cake recipe, juicy strawberries, and fresh whipped cream! With fresh strawberries on hand then there has to be pancakes…I made my usual pancake recipe and then topped with bananas, toasted pecans, and sweet berries!  Delicious! Fresh strawberry-lemonade on the patio!  So refreshing!! So…what’s your pick?  How do you like to eat your strawberries?

Happy Wednesday! I set a table next to our woodlan Happy Wednesday! I set a table next to our woodlands in memory of my beautiful Mother who was a lovely example of a Proverbs 31 woman. Mother had the gift of hospitality and shared it with everyone. Karl Rosenfield peonies from my garden fill a treasured keepsake pitcher handed down from my grandmother! A beautiful floral April Cornell ‘Lillianna’ tablecloth and Famille Rose salad plates elevate the status of the old picnic table next to our woodlands. I have collected bejeweled enamel trinket boxes for many years and shared a few on the table for whimsy and fun. For memories of my Mother, click the link in my profile.

With glorious weather, the table next to our woodl With glorious weather, the table next to our woodlands was perfect for teatime! It is Tea on Tuesdays with blogging friends Mary and Kitty. The table is enhanced by views toward the mountain, woodlands, and the large Snowball Viburnum. The verdant rye grass appears as a green carpet that has been spread for Easter! Vintage Fitz and Floyd ‘Herb Garden’ teapots, sugar and creamer, and oval tray are suited for springtime with their embossed bows, vegetables, and words. A bouquet of Kwanzan Cherry blossoms add more spring color to the setting. 

I am serving a simple teatime with Earl Grey tea, savory egg salad filled phyllo cups, and sweet vanilla cupcakes with cream cheese icing, and macarons! A favorite cottage rose tablecloth and Essential napkins are by April Cornell.

We are most blessed to celebrate the resurrection of Christ, being the source of new life, yet new life that is eternal. The beauty of this spring will again give way to another autumn in a few months, but the significance of His empty tomb will never change! Happy Thursday! I love setting a table next to our Happy Thursday! I love setting a table next to our woodlands and this is the first one of the season, an Easter/Spring table! I love all the sweet bunny decorations, but Easter is so much more. We celebrate Easter because of the resurrection of Jesus Christ.  His bodily resurrection enables all those who choose to follow Him to have assured victory over our greatest enemy…death!

 I look forward each year when some of my favorite blooms display their amazing beauty in our garden. Snowball viburnum in its full glory with large creamy white blooms. Climbing Lady Banks Rose is covered in hundreds of miniature yellow blooms cascading to the ground. An old-fashioned Bridal Wreath Spirea with its branches arching to the ground in a fountain-like growth habit is loaded with showy double white flowers in clusters of three to six that resemble a bride’s wreath. I still claim the Kwanzan Cherry tree even though it is now on our son’s property. Its ruffled pink double pink blossoms are some of my favorite blooms. All four of these blooms make up an arrangement with a few tulips from the grocery store. 

A fluffle of moss bunnies hopped up to the picnic table. A ‘Charming’ tablecloth with  Mary Lake-Thompson napkins and Williams Sonoma enchanting ‘Famille Rose’ bunny plates!

I often shared my sweet Daddy and his stories on m I often shared my sweet Daddy and his stories on my blog. My precious Daddy passed away peacefully on March 26th at the age of 94, surrounded by his beloved family! He was born during the depths of the Great Depression. That may have been part of the reason he was always content and loved the simple things. 

“A good name is to be chosen rather than great riches, and favor is better than silver or gold.” Proverbs 22:1

After high school graduation he signed to play professional baseball with the Cleveland Indians Organization. His baseball career was cut short when he was drafted in the army. He was seriously wounded in the Korean War and was awarded a Purple Heart and two bronze stars. Upon returning home, he married my beautiful Mother and they shared 54 wonderful years together before she passed away suddenly. 

My brother and I grew up in a Christian home, bathed in love, calm, security, and contentment, under the care of the two finest parents anyone could have. Daddy was known as Pawpaw to his three grandchildren and nine great-grandchildren. 

My heart is broken, he was the best Daddy a girl could have. I know he is present with the Lord and I rejoice in that promise, knowing too, that my Mother is also in the eternal presence of our Heavenly Father.

Welcome to Sunshine Cottage and the March edition Welcome to Sunshine Cottage and the March edition of Tea on Tuesdays. My inspiration for teatime is the beautiful linens from @april.cornell With the celebration of their 50th anniversary, many Heritage Prints from the archives have returned. Eden is one of the beautiful patterns that has returned. It is a soft purple paradise where butterflies float, roses bloom, and soft sage leaves levitate. As an April Cornell Brand Ambassador, I was gifted these gorgeous linens! I have been a collector of @april.cornell linens for many years…the floral patterns resonate with my love of English Country. 

I am serving my favorite, Earl Gray tea, from an Eileen’s Reserve teapot. Teacups by Grace Teaware and vintage Rose Chintz salad plates by Johnson Brothers add more floral patterns to the mix. Japanese Magnolia blooms were cut from my garden and placed in a lilypad teapot!

Happy Monday! With March bringing the promise of s Happy Monday! With March bringing the promise of spring and looking forward to our garden awakening, I planted a blooming bulb garden in my Sunshine Cottage! The butcher block countertop under a window, was a perfect place for a mini garden. Muscari, hyacinths, tulips, and daffodils danced in the sunlight and filled the cottage with an amazing fragrance!

Happy first Monday of February! After so many cold Happy first Monday of February! After so many cold days, we are experiencing a tease of spring with a 73 degree day that is forecast. After the gray and cloudy days, I needed a dose of color and decided to set a colorful citrus themed brunch! Using a bird gold and pewter stand, I mixed a citrus medley of lemons, oranges, and limes with pink and white carnations as the centerpiece. The table is highlighted with blue and white dishware. Fresh squeezed orange juice, French-pressed coffee and sweet treats of lemon poppyseed muffins, lemon cake with lemon icing, and lemon pastries are perfect for a small brunch. A faux lemon topiary belonged to my beloved Mother and seemed a perfect addition to a citrus-themed table! Welcome to Sunshine Cottage where I have been fluf Welcome to Sunshine Cottage where I have been fluffing for Valentine’s Day! For many years my Sweetheart and I have celebrated February 14th at home where it is quiet, no reservations are required, and we always have a table by the window! 

I love the traditional colors of red and pink! Frilly carnations fill a vintage Staffordshire, ‘Charlotte’ pitcher which rests on an antique Limoges plate with a velvet gold-crowned heart. The plate stack consists of a Royal Stafford ‘Asiatic pheasant’ dinner plate, American Atelier ‘Baroque’ luncheon/salad plate, Johnson Brothers, ‘Winchester’ salad plate, and a vintage pierced Bavarian rose plate! I am a huge fan of mixing colors, patterns, and textures for a collected look.

Happy Tuesday! On this very cold winter’s day, I Happy Tuesday! On this very cold winter’s day, I am serving my favorite tea, Earl Grey, in the Sunshine Cottage where it is warm and cozy! The magic of dancing sunlight enhances the table that is dressed with a warm tartan plaid throw repurposed as a tablecloth! ‘Winter Fauna’ bird salad plates from Pottery Barn (many years ago and now discontinued) remind me of the birds I watch from my kitchen window during the winter season. The Grace Teaware set adds more blue and white to the Spode ‘Blue Room’ dinner plates. Sweet treats were placed on a stack of Bordallo Pinheiro plates! A darling Hummel ‘Icy Adventure’ depicts a scene of an outdoor frozen pond with a pair of sweet ice skaters, a rosy cheeked boy and girl who have fallen down on the ice.
